Makes about 26
Ingredients:
- 100g unsalted butter at room temperature
- 80g golden caster sugar
- 1 egg yolk
- 200g plain flour
- 1/2 tsp mixed spice
- 1 tsp cinnamon
- 70g candied/crystallised ginger cut into small pieces (add a tsp of flour, it helps it to stop sticking!)
- 2 tbsp milk
- Preheat the oven to gas 6/200 c
- Line two large baking sheets with baking parchment or greaseproof paper
- Beat the butter on a medium speed for about a minute to soften it
- Add the caster sugar and beat for a further 3 minutes
- Add the egg yolk and beat again until it is well incorporated and fluffy
- Add the flour, spices and ginger and give a few whizzes until it is combined
- Add the milk and mix until it starts to form a dough
- Stop mixing here unless you want something which resembles clapped out leather...
- Chill the dough for 30 minutes
- On a floured surface, roll out the dough to about half a centimetre thick, and cut out your shapes. I used bunnies, but the world is your oyster. Use what ever the devil you fancy!
- Pop them onto the prepared baking sheet and bake in the middle of the oven for about 12 minutes. The edges will just start to look golden brown
- Cool fully on a cooling rack
They can be served as is, but I decided to cover mine with glace icing made from icing sugar mixed with a little warm water to form a thick, yet spreadable paste. I use food colouring gel to make it pink, glitter sprinkles and a white glitter pen for the detail. Leave to set or scoff the lot, dependant on your mood...

ReplyDeleteSo cute! I can sympathise with the mad cookie cutter buying spree...this seems to be an all too regular occurance! I have a cutter for every occasion! :-)
