Easter Bunny Biscuits

A few weeks ago, I went on mad cookie cutter buying mission in Thyme Deli. Easter was round the corner, which meant a bunny cutter was on the cards. I found quite a few recipes for Easter biscuits, none of which really floated my boat. So... I created this one!

Makes about 26

Ingredients:

  • 100g unsalted butter at room temperature
  • 80g golden caster sugar
  • 1 egg yolk
  • 200g plain flour
  • 1/2 tsp mixed spice
  • 1 tsp cinnamon
  • 70g candied/crystallised ginger cut into small pieces (add a tsp of flour, it helps it to stop sticking!)
  • 2 tbsp milk
Method:

  1. Preheat the oven to gas 6/200 c
  2. Line two large baking sheets with baking parchment or greaseproof paper
  3. Beat the butter on a medium speed for about a minute to soften it
  4. Add the caster sugar and beat for a further 3 minutes
  5. Add the egg yolk and beat again until it is well incorporated and fluffy
  6. Add the flour, spices and ginger and give a few whizzes until it is combined
  7. Add the milk and mix until it starts to form a dough
  8. Stop mixing here unless you want something which resembles clapped out leather...
  9. Chill the dough for 30 minutes
  10. On a floured surface, roll out the dough to about half a centimetre thick, and cut out your shapes. I used bunnies, but the world is your oyster. Use what ever the devil you fancy!
  11. Pop them onto the prepared baking sheet and bake in the middle of the oven for about 12 minutes. The edges will just start to look golden brown
  12. Cool fully on a cooling rack

They can be served as is, but I decided to cover mine with glace icing made from icing sugar mixed with a little warm water to form a thick, yet spreadable paste. I use food colouring gel to make it pink, glitter sprinkles and a white glitter pen for the detail. Leave to set or scoff the lot, dependant on your mood...

  1. So cute! I can sympathise with the mad cookie cutter buying spree...this seems to be an all too regular occurance! I have a cutter for every occasion! :-)
